How do I change a Cmaj7 to a C7 chord?

Depending on the scale you’re in, a borrow could allow you to get C7 (for example, in A minor, borrowing the C chord from Phrygian would allow you to get C7). Otherwise the search tool should work in most situations, just type in C7 and it’ll do the work for you

simply go to the search option (magnifying glass) and enter C7
